Yeah atm I'm maining striker, hes mobile, and prefers close - mid range fights. Of course you can pick up a sniper or such, but his perks such as shoulder charge and Fist of Havoc are extremely strong and complement this style of play. In terms of defence, its hard to see a major difference in the classes. I've been testing defender atm and they are still quite mobile, but they need a heavy focus on strength due Disintegrate giving a shield after killing a target, which you can buff with perks, and exotic armor. There Ward of Dawn is extremely strong, but has major flaws. I'd consider it a more PvE ability due to being able to take advantage of predicting how NPCs move. Hunters I haven't tested much, but they are extremely strong in the crucible(especially bladedancer), and are weaker in PvE, due to lacking an aoe skill. I'm sure regardless you'll enjoy either of the classes, as it doesn't really ruin the experience.

I'm also interested in the warlock void walker, when is a good time to start a second guardian? I'm currently a lvl 6 Titan, and I'm thinking when I get to lvl 10 or lvl 15. But what do you suggest?

I think I'm going to go defender when I reach lvl 15, I'm almost there, currently at lvl 14. Defender looks like an effective class

Actually, I will become a defender, I love the defense, and it will help me become better at supporting my teams and being a team player.

For me, Titan, because I like being tank, adventurer, and being a half-badass in my journey, missions, and my goal of being "The Warrior"

But at times, I want to be a Warlock, because I like being mystical, using magical powers of unknown elements (if its arcanum or psionic), and being a half-battlemagi in journey, missions, and my goal of being "The Conjurer"

Ok if it were up to me, I would choose Titan, but this is your choice. Titans are a tank class. The striker subclass is an attacking tank, and the defender is a defending tank as the name suggests, it unlocks at lvl 15. The warlocks are magical. The voidwalker is more of an attacked base subclass, the sun singer is more of a team support based class which unlocks at lvl 15. So if you prefer tank that can attack up close or defend up close, Titan, if you want to stay back and attack from far and support your team, warlock. But the choice is yours. You can create a new character and try both if you want.

Btw guys I just did a pvp match and crushed it with the Titan but I also have a level 23 warlock. What weapons should I be looking to get?

I am of the opinion that the best time to start a  new character is when you unlock your second sublcass with your first character (level 15, I think?) That gives you access to the second subclass of the new character you just started as well.
